About the Recipe

Considering that shrimp is a rich source of protein, and when cooked in olive oil, it provides a dose of healthy fats, it's a smart choice to complement this shrimp dish with a serving of complex carbohydrates. Opt for options such as quinoa, farro, brown rice, or potatoes to create a balanced meal.

To complete the meal with a side of vegetables, I believe this recipe would be a delightful pairing with cooked broccoli, zucchini, or sautéed leafy greens like kale or Swiss chard, adding both flavor and nutrition to your plate.

Ingredients

  • Approx. 36 large shrimp, thawed, peeled + deveined

  • 1 Tbsp olive oil

  • 2 large cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 lime, juice + zest

  • 1 tsp honey

  • Salt + pepper, to taste

Preparation

  1. PREP SHRIMP: Thaw, peel, and devein shrimp if needed. Pat shrimp dry with a paper towel + place in a medium-sized bowl. Toss shrimp in olive oil, salt, and pepper. Set aside.

  2. PREP OTHER: Mince garlic cloves. Grate ginger. Wash + dry lime well, then zest the peel. Cut lime in half and juice it into a small bowl.

  3. MAKE SAUCE: Whisk lime juice, grated ginger, and honey in a small bowl until a smooth sauce forms. Set aside.

  8. COOK SHRIMP: Heat up a frying pan or skillet over medium-high heat. Once the pan is hot (a splash of water should sizzle on it), place the shrimp on the pan. They should be in a single layer with a bit of space between each piece – work in batches as needed.

  9. Cook the shrimp for 1 minute per side (until opaque, pink, and slightly browned). Remove from heat and set shrimp aside in a clean bowl. Repeat until all shrimp are cooked. Do not overcook shrimp – they will be added back to the pan at the end!

  10. Once shrimp are cooked, add minced garlic to the same pan and sauté for a minute. There should still be some oil in the pan, but you are welcome to add a splash more olive oil if needed!

  11. Then, pour lime sauce into the pan. Stir and allow to bubble for about 30 seconds.

  12. Add cooked shrimp back into the pan and toss in the sauce. Remove from heat and top with lime zest, salt, and pepper to finish.
